If the beef is the "soul of the Austrian cuisine", then the veal can be definitely labeled as its backbone. For it is almost impossible to cook Austrian cuisine without veal. Pearl colored, delicate and free of fat, veal is very healthy and yet so delicious. It is easier digestible than beef or pork. The subtle taste of this meat makes it ideal to adapt to many combinations of sauces and spices. Here I offer several popular classic Austrian standard dishes, as well as some of my refined variations. Always a good wine to drink with the veal dishes is a light Pinot Blanc (preferably any Austrian) or a nice cold glass of beer (preferably any Austrian - of course, they brew the best!).
