If the beef is the "soul of the Austrian cuisine", then the veal can be definitely labeled as its backbone. For it is almost impossible to cook Austrian cuisine without veal. Pearl colored, delicate and free of fat, veal is very healthy and yet so delicious. It is easier digestible than beef or pork. The subtle taste of this meat makes it ideal to adapt to many combinations of sauces and spices. Here I offer several popular classic Austrian standard dishes, as well as some of my refined variations.
- Wiener Schnitzel (Viennese Veal Cutlets):
Breaded veal cutlets, fried to golden perfection. They are the ne plus ultra of the Viennese cuisine. The cutlets are garnished with bright lemon wedges and a dash of cranberry sauce. They are delicious with buttered parsley potatoes and/or rice and they are served the traditional way with leaf or cucumber salad.
The Wiener Schnitzel are also exceptionally delicious made with pork instead of veal.

- Parisian Cutlets (Pariser Schnitzel):
They are prepared and served the same way as the Wiener Schnitzel, except they are fried with flour and egg only, not with the bread crumbs.

- Cutlets Naturelles (Naturschnitzel):
A flawless delight for the purist. The simple sauce of clear broth and veal stock emphasizes the natural delicacy of the cutlets. The Naturschnitzel are served with pressed white rice. The cutlets are garnished with bright lemon wedges.

- Cutlets With Paprika (Paprika Schnitzel):
Smoked bacon and bright paprika give juicy veal cutlets a dramatic accent to round out this classic dish. The mildly spicy Paprikaschnitzel are served with Nockerl (Spätzle) or buttered noodles.

- Rolled Stuffed Cutlets With Potato Dumplings (Kalbsrouladen mit Kartoffelknödel):
Two things distinguish this dish. The cutlets are deliciously filled with ham, sage leafs, mozarella cheese and rosemary. A heady reduction of Madeira and stock blended with ice cold butter pieces accompanies the veal.
In this case a full-bodied white wine is a good accompaniment. Try a Gewürztraminer.

- Eggs In Their Nest (Eier im Nest):
A classic demand again and again by empty stomachs. The cutlets are each filled with a hard boiled egg and a delicious mushroom sauce accompanies this choice of veal. The ³eggs in their nest² are served with pressed rice.

- Ragout Of Veal (Eingemachtes Kalbfleisch):
Delectable sauteéd cubes of veal are covered with finely cut seasonal vegetables. The whole is sauced by a Riesling cream with an opulent touch of chicken liver. The ragout of veal is served with attractive small Bröselknödeln (bread crumb dumplings) or rice. A significant spring dish that again recalls the fine dining of the Austrian Empire.

- Veal Gulyas (Kalbsgulsch):
A memorable winter celebration! Veal cubes are couched on a rich bed of sour cream sauce which was highlighted by a touch of fragrant paprika and refreshing tomato purée. Nockerln (Spätzle), noodles, macaroni or rice are suitable side dishes.

- Cordon Bleu:
This world famous classic dish is served with buttered parsley potatoes and either potato-, cucumber-, tomato-, mayonnaise- or leaf salad.

- Emperors Cutlet (Kaiserschnitzel):
A creamy sauce with lemon juice and lemon zest gives the veal cutlets a tart, vital flavor. Garnished with capers and parsley, this is a pretty dish and will be served with Nockerln (Spätzle) or buttered noodles.
The Kaiserschnitzel is enhanced by a medium-dry white wine.

- Parmesan Cutlets (Parmesankalbsfilets):
An interesting array of flour, egg and Parmesan breading accompanies the Cutlets. They are served with buttered parsley potatoes and leaf salad. Grandioso!
The Kaiserschnitzel is enhanced by a medium-dry white wine.

- Stewed Veal and Rice (Reisfleisch):
Exactly what it¹s title promises. Delicious with grated cheese and a green salad.

Always a good wine to drink with the veal dishes is a light Pinot Blanc (preferably any Austrian) or a nice cold glass of beer (preferably any Austrian - of course, they brew the best!).
