Menu - Soups

Please enjoy the Austrian folk music:

The foundation of the best of all soups is clear broth and this is the soup eaten most throughout Austria, almost every day in fact. It appeared on the table as an added fillip to tease the appetite without dulling it, to tempt the palate and prepare it for more elaborate features of the meal.
Thick soups were something else. Adapted from recipes brought to Austria by immigrants from other countries, they were considered to be a meal in themselves. Followed by a hearty salad and a rich dessert!

Beef Broth with Noodles (Nudelsuppe):
Thin Vermicelli noodles are served in hot beef broth.

Beef Broth with Baked "Peas" (Suppe mit gebackenen Erbsen):
Baked "peas" (tiny fried batter pieces) are served in hot beef broth.

Viennese Onion Soup (Wiener Zwiebelsuppe):
Shortly fried onion rings are served in hot beef broth with grated Parmesan cheese.

Clear Chicken Soup (Klare Hühnersuppe):
Clear Chicken Soup is served with the chicken meat cut up into little pieces and Vermicelli noodles.

Creamed Chicken Soup (Hühnereinmachsuppe):
This is considered by some the best soup of all. If eaten as a main course, it should be followed by a heavy dessert. True devotees prefer it to the finest roast. This soup is made from chicken parts and giblets and creamed before serving.

Gulyas Soup (Gulyassuppe):
The only difference between a gulyas and this soup is that the meat is cut smaller and the gravy thinned out into a soup. Best served with Salzstangerl.

Viennese Potatoe Soup (Wiener Kartoffelsuppe):
This is a variation of gulyas soup. It is made with ground beef and potatoes.

Cabbage Soup with Frankfurters (Kohlsuppe mit Frankfurter Würstchen):
Cabbage/potatoe soup is served with Frankfurters.

Mushroom Soup (Schwammerlsuppe):
This delicious soup is made with mushrooms and it is usually served with small Bröselknödeln (bread crumb dumplings).

Any good wine (preferable any Austrian) or a nice cold glass of beer (preferable any Austrian - of course, they brew the best!) goes well with the soups.
