The foundation of the best of all soups is clear broth and this is the soup eaten most throughout Austria, almost every day in fact. It appeared on the table as an added fillip to tease the appetite without dulling it, to tempt the palate and prepare it for more elaborate features of the meal.
Thick soups were something else. Adapted from recipes brought to Austria by immigrants from other countries, they were considered to be a meal in themselves. Followed by a hearty salad and a rich dessert!

Any good wine (preferable any Austrian) or a nice cold glass of beer (preferable any Austrian - of course, they brew the best!) goes well with the soups.
