The Viennese beef kitchen is legendary, but the Austrians dearest meat is the pork. With a consumption of 99 pounds of pork per head in a year, Austria leads the pork consumption in the statistics. About 60% of all the meat consumed in Austria is pork. The pig is also believed to bring good luck. At new years eve it is customary to present family and friends with little pigs made from chocolate or marzipan, to have good fortune and blessing for the new year. A very lovely custom.
- Roast Pork (Schweinsbraten):
This very rustic dish will be one of the most delicious meals you have ever had. The loin of pork is deliciously douched in a garlic and caraway saturated sauce.
The tanginess of Sauerkraut or warm cabbage salad or cucumber salad is a great complement for this so beloved Austrian pork dish and it is just perfect together with either rice, or Semmelknödel (white bread dumplings) or Serviettenknödel (napkin dumplings).

- Roasted Leg of Pork (Gebratene Schweinsstelze):
Caraway and garlic give this dish it¹s distinctive flavor. It will be served with either Sauerkraut or warm cabbage salad or Semmelknödel (white bread dumplings) or Serviettenknödel (napkin dumplings) or by request a combination of these side dishes.

- Suckling Pig (Spanferkel):
A whole suckling pig will be roasted - the perfect dish for your next party!
The suckling will be accompanied by warm cabbage salad and Serviettenknödel (napkin dumplings).

- Ham in a Blanket (Schinken in Brotteig):
This is a typical Easter dish. It was used originally as a means to keep boiled ham for a while without refrigeration. The ham is wrapped in bread dough and baked. The traditional side dish is Sauerkraut.

- Virgin's Roast (Jungfernbraten):
Heaven alone knows the reason for this name. Whatever the reason, it is very good. Capers and parsley add zest to this juicy dish. It is served with rice and root vegetables in sourcream.

- Styrian Pork with Roots (Steirisches Wurzelfleisch):
The famous Styrian Pork is named after
"Styria", which is an Austrian province in the Southern part of the country. Our 'Governator' Arnold Schwarzenegger was born and raised there.
It is cooked in soup with chopped root vegetables and served with grated horseradish and parsley potatoes.

- Medallions of Pork with Beer-Caraway-Sauce (Schweinskotletts mit Bier-Kümmel-Sauce):
An intensely flavorful dish with an aromatic, slowly simmered sauce. This robust winter fare is served with either string beans with bacon, or onion potatoes, or brussels sprouts, or beans or by request with a combination of these side dishes.

- Pork Roll (Schweinsroulade):
Loin of pork is filled with pork meat, chicken breast, nuts and ham and then wrapped in cabbage leaves and roasted. It will be served with either rice or Letscho (vegetable side dish made from peppers).

- Peasants Pork Chops (Bauernkotelett):
The "secret" of this ribald and hefty tasting Bauernkotelett lies in the tasty addition of bacon, potatoes and mushrooms.
It is served with either leaf- or cucumber salad.

- Spareribs (Schweinsripperl):
This is the Austrian version of this famous American dish.
They are served either with foil potatoes or corn or pepper- or cucumber salad.

- Medallions of Pork baked with Cheese (Schweinsfilet mit Butterkäse überbacken):
The medallions are baked with ham and cheese and accompanied by a delicious sauce.
It will be served with either spinach or spinach strudel or brussels sprouts or onion potatoes or potatoe patties.

- Gulyas with shredded Cabbage (Szegediner Gulyas oder Krautfleisch):
Szegedin is a town in Hungary. This pork is healthily enhanced with shredded cabbage. It tastes best with plain boiled potatoes.

- Pork Gulyas (Schweinsgulsch):
A memorable winter celebration! Pork cubes are couched on a rich bed of sour cream based sauce which is highlighted by a touch of fragrant paprika and refreshing tomato purée. Either Nockerln (Spätzle), or noodles, or macaroni, or rice are suitable side dishes.

- Wiener Schnitzel (Viennese Pork Medallions):
Breaded pork Medallions, fried to golden perfection. They are the ne plus ultra of the Viennese cuisine. The Medallions are garnished with bright lemon wedges and a dash of cranberry sauce. They are delicious with buttered parsley potatoes and/or rice and they are served the traditional way with leaf- or cucumber salad.
The Wiener Schnitzel are also exceptionally delicious made with veal instead of pork.

- Parisian Pork Medallions (Pariser Schnitzel):
They are prepared and served the same way as the Wiener Schnitzel, except they are fried with flour and egg only, not with the bread crumbs.
