Liver:
- Tyrolean Liver (Tiroler Leber):
I am sure there is no need for me to tell you much about Tyrol. It maybe is the best known of all Austrian provinces to travelers. The capital of Tyrol is Innsbruck, and it is certainly one of the most beautiful parts of Austria.
The liver is fried and then simmered in a delicious caper sauce. It comes either with Nockerln (Spätzle) or rice or Erdäpfelschmarren (boiled sliced potatoes fried).

- Liver Gulyas (Lebergulyas):
The awesome taste of onions gives an extravagant commendation to this so traditional dish.
It is perfect either with boiled potatoes or Nockerln (Spätzle) or noodles or Semmelknödel (white bread dumplings) or Serviettenknödel (napkin dumplings).

- Baked Liver (Gebackene Leber):
Breaded veal liver cutlets, fried to golden perfection. The cutlets are garnished with bright lemon wedges and a dash of cranberry sauce. They are delicious with either buttered parsley potatoes and/or rice and they are served the traditional way with leaf or cucumber salad.

- Fried Liver with Onions (Geröstete Leber):
The liver is cut into small pieces, then fried with onions and simmered in a wonderful sauce. This is served with either Nockerln (Spätzle) or rice or Erdäpfelschmarren (boiled sliced potatoes fried).

- Glazed Liver (Glacierte Leber):
The liver is cut into filets and then fried and then put on top of baked bananas. Fried bacon will be placed on top. This is served with either rice or mashed potatoes.

Kidneys:
- Fried Kidney with Onions (Geröstete Nierndln ):
The kidney is cut into small pieces, then fried with onions and simmered in a wonderful sauce. This is served with either Nockerln (Spätzle) or rice or Erdäpfelschmarren (boiled sliced potatoes fried).

Tongue:
- Veal/Pork Tongue (Zunge):
A classic demand again and again. The tongue is simmered in stock until soft, cut into slices and served with a Béchamel sauce and seasonal vegetables. This is served with Bröselknödeln (bread crumb dumplings).
Or the tongue is served with mashed potatoes or purée of dried yellow or green split peas.

- Tongue Baked with Anchovies (Zunge mit Sardellen):
The tongue is simmered in stock until soft, and then baked in anchovy butter. This is served either with mashed potatoes or a purée of dried yellow or green split peas.

Tripe:
- Tripe in White Wine Sauce (Kuttlen in Weissweinsauce):
Tripe will be cooked in stock until it is nice and soft and then it will be processed with wine and cream , tomatoes and herbs. Simply delicious! It is served with parsley potatoes.

Any good wine (preferably Austrian) or a nice cold glass of beer (preferably Austrian - because they brew the best!) goes well with the organ meats.
