You will perhaps be surprised that I am only offering so few dishes for this meat, but Lambs in Austria were raised to sheephood to produce valuable wool, and only rarely was a yearling butchered. Only in the month of spring was the "young lamb" available to the owner of a fat wallet. A full-bodied, elegant red wine is appropriate with lamb.
