Menu - Lamb Dishes

Please enjoy the Austrian folk music:

You will perhaps be surprised that I am only offering so few dishes for this meat, but Lambs in Austria were raised to sheephood to produce valuable wool, and only rarely was a yearling butchered. Only in the month of spring was the "young lamb" available to the owner of a fat wallet.

Leg of Lamb with Mushrooms (Lammkeule mit Tafelpilzen):
This is a classic marriage of flavors. This lamb is enhanced with a sauce that lives of rich mushrooms and sour cream. An impressive Easter dish! Wild rice is perfect as a side dish.

Lamb Chops in Puff Paste (Lammkotletts in Blätterteig ):
A refined harmony of lamb, liver stuffing, puff pastry, vibrant in a pool of richly scented vegetable/meat sauce. A fine way to celebrate spring. It is served with a light salad.

Lamb Chops in Potatoe Crust (Lammkotletts in Erdäpfelkruste):
Individual lamb chops are quickly roasted with potato strips on each side to a mouthwatering succulence. Unsurpassed served with Ratatouille (a mixed vegetable dish).

Breaded Fried Lamb (Gebackenes Lamm mit Mehl und Bröseln):
This is the lamb version of "Wiener Schnitzel".
Breaded lamb cutlets, fried to golden perfection. The cutlets are garnished with bright lemon wedges and a dash of cranberry sauce. They are delicious with buttered parsley potatoes and/or rice and they are served the traditional way with leaf- or cucumber salad.
The Wiener Schnitzel are also exceptionally delicious made with veal and pork instead of lamb.

Boiled Lamb (Gesottenes Lämmernes):
This lean dish is actually more a soup and is served with vegetables and potatoes in one deep dish.

A full-bodied, elegant red wine is appropriate with lamb.
