Menu - Fish, Seafood and Snail Dishes

Friday was the fish day in Austria, although fish was available every day of the week and was sold in various fish specialty stores. From the lakes and streams of his own valleys, from the waters of the Austrian Adriatic, from the North Sea fishing centers of Germany, Denmark, and Sweden, fish came to Austria in almost unbelievable quantities, to receive the tender attention, the affectionate, imaginative skill, of Austrian cooks.
Styrian (southern Austrian province) snails are famous, almost more than the French snails (escargot) and in Styria men love to eat snails because they are believed to be a natural "Viagra".

Paprika Fish (Paprikafisch):
Of all the ways to prepare just any kind of fish, this is undoubtedly the one best liked in Austria. This seasonal fish is wonderfully processed with onions, cream and paprika. It is served with plain boiled potatoes or with noodles.

Fish Steak with Anchovy Sauce (Fisch Schnitzel mit Sardellensauce):
The addition of anchovies and lemon juice gives an interesting taste to this seasonal fish. It is served with seasonal vegetables and rice.

Pepperfish (Pfefferfish):
Seasonal fish is poached with vegeatable sauce. It is also served with plain boiled potatoes or with noodles.

Blue Trout (Blaue Forellen):
This was definitely the favorite manner to prepare trout. The secret is in absolute ³fresh² fish. The trout is poached until it turns blue. It is served with melted butter and boiled parsley potatoes.

Fried Snapper (Barbe auf dem Rost gebraten):
This fish is deliciously fried and will be served with sauce hollandaise.

Fish Gratin (Überkrustete Fisch):
You will not want to miss this. Deliciously simmered in a mushroom-, vegetable-, Madeira wine sauce and sprinkled with cheese. It will be served with boiled potatoes.

Baked Fish with Anchovy Butter (Gebratener Fisch mit Sardellenbutter):
Simply baked fish filets with anchovies topped with melted anchovy butter. It will be served with straw potatoes.

Breaded Fish Patties (Fischlaibchen mit Bröseln):
Processed fish is formed into patties and fried. It will be served with salad, Sauerkraut or green vegetables.

Fried Clams (Gebratene Muscheln):
Clams are rolled in cheese and breadcrumbs and then deliciously fried . This will mainly be served as an appetizer.

Boiled Shrimp (Krevetten):
Shrimp are cooked in salted water with caraway seeds and served with sauce tartar.

Shrimp are dipped in frying batter, egg and breadcrumbs and then fried. They are accompanied by mayonnaise or sauce tartare.

Snails a lá "Drei Husaren" (Weinbergschnecken "Drei Husaren"):
Snails will be baked with mushroom sauce and snail butter. They are served with Baguette (French white bread).
