The markets of Vienna were well supplied with all the various barnyard fowl. Geese and ducks came from Bohemia; guinea fowl and turkey from the valleys of the Southern Tyrol and Lobardy; chicken, fowl, and squab from Hungary, as well as from the neighboring countryside. Rabbit was commonly raised in the back yard. The most typically Austrian dish in poultry is the "Backhendl" (spring chicken made like Wiener Schnitzel). Each of my chicken, turkey and rabbit dishes has its own definitive stimulus and are appealingly presented.

The best wines to accompany these dishes are St.-Laurent, Cabernet-Merlot, Pinot Noir, Blau-Fränkisch, Cabernet Sauvignon.
