Menu - Chicken, Turkey and Rabbit Dishes

The markets of Vienna were well supplied with all the various barnyard fowl. Geese and ducks came from Bohemia; guinea fowl and turkey from the valleys of the Southern Tyrol and Lobardy; chicken, fowl, and squab from Hungary, as well as from the neighboring countryside. Rabbit was commonly raised in the back yard. The most typically Austrian dish in poultry is the "Backhendl" (spring chicken made like Wiener Schnitzel). Each of my chicken, turkey and rabbit dishes has its own definitive stimulus and are appealingly presented.

Chicken:

Roasted Chicken (Brathendl):

A whole chicken is roasted. It is served with rice and cucumber salad.

Fried Chicken (Backhendl):
Since the early eighteenth century, Backhendl, golden fried chicken garnished with lemon wedges, has been a staple of the Austrian cuisine. This dish is the original. Whole chicken pieces are breaded and then fried. They are served with a seasonal salad.

Paprika Chicken (Paprikahuhn):

Colorful and palatable, this chicken gulyas needs nothing more than Nockerln (Spätzle) to make a delicious meal.

Chicken Soup (Eingemachte Hühnersuppe):
This traditional favorite is a must in the cold season. A whole chicken is cooked in soup stock with seasonal vegetables. This hearty soup is served with Bröselknödeln (bread crumb dumplings).

Roast Stuffed Chicken (Gefüllte Hühner):
This is THE party dish. The chickens are stuffed with a delicious light shrimp stuffing and then roasted. Potatoes are roasted with the chickens and it is usually served with a green salad and a seasonal vegetable.

Breast of Chicken with Mushrooms (Gedämpfte Hühnerbrüstchen mit Champignons):

Breasts of chicken are browned and then simmered in a delicious mushroom sauce. Side dishes are either rice, rice with green peas or stewed fruit.

Rabbit:

Rabbit in Juniper Cream Sauce (Hase in Wacholderrahmsauce):
This rabbit is simmered in a wine- juniper berry- cream sauce and served with noodles, Kartoffelkroketten (potato crustlings), Semmelknödel (white bread dumplings), Serviettenködeln (napkin dumplings), cranberry sauce, brussels sprouts.

Rabbit in Vodka Sauce (Hase in Wodkasauce):
This rabbit is simmered in a vodka infused sauce and served with Kartoffelbällchen (potatoe balls), Kartoffelkroketten (potato crustlings), Mandelkartoffeln (almond potatoes), brussels sprouts, red cabbage, glazed apples, glaced chestnuts and cranberry sauce.
