Boiled beef was the main and most important part of the Austrian kitchen up to World War I. It had to be, because beef broth was eaten almost daily. In the smaller homes, beef was eaten as a main course, with vegetables and potatoes, and again, there are many sauces, both cold and warm which give it a "new taste" at each different serving. In the wealthier households beef was served as "black meat", a second course between the soup and the roast. Boiled beef is one of the things, almost like milk, eggs, bread and butter, which you can eat daily.
Incidentally, boiled beef was the late Austrian Emperor Franz Joseph's favorite dish, he ate it almost daily too and after he ate he stood up with the words: "Es war sehr gut, es hat mir sehr geschmeckt!". Which means: it was very good, I enjoyed it very much! Austrians are also known for their remarkable barbecued beef preparations!

Always a good wine to drink with the beef dishes is a nice red wine (preferably any Austrian) or a nice cold glass of beer (preferably any Austrian - because they brew the best!).
