Boiled beef was the main and most important part of the Austrian kitchen up to World War I. It had to be, because beef broth was eaten almost daily. In the smaller homes, beef was eaten as a main course, with vegetables and potatoes, and again, there are many sauces, both cold and warm which give it a "new taste" at each different serving. In the wealthier households beef was served as "black meat", a second course between the soup and the roast. Boiled beef is one of the things, almost like milk, eggs, bread and butter, which you can eat daily.
Incidentally, boiled beef was the late Austrian Emperor
Franz Joseph's favorite dish, he ate it almost daily too and after he ate he stood up with the words: "Es war sehr gut, es hat mir sehr geschmeckt!". Which means: it was very good, I enjoyed it very much!
Austrians are also known for their remarkable barbecued beef preparations!
- Beef Gulyas (Rindsgulasch):
The great taste of onions gives an extravagant commendation to this so traditional dish.
Beef Gulyas is perfect with either boiled potatoes or Nockerln (Spätzle) - the picture shows them with the famous Viennese "black Nockerln". Also very good are either noodles or Semmelknödel (white bread dumplings) or Serviettenknödel (napkin dumplings) with the Gulyas.

- Viennese Roast (Wiener Rostbraten):
This beef becomes even more juicy and delicate because it will be artfully larded with bacon. Capers add a special note to the smooth cream sauce. The Viennese Roast is served with either seasonal vegetables or lightly buttered noodles, or by request with both.

- Sirloin á la Esterházy (Esterházy-Rostbraten):
This traditional favorite was named after a family of wealthy aristocrats whose castles and churches are scattered throughout the Austrian province of Burgenland. The Esterházys were known as music lovers, particularly as patrons of Haydn, Schubert, and Liszt.
The sirloin á la Esterházy is accompanied by a hearty sauce with vegetables. It is served either simply with Nockerln (Spätzle), or with Kartoffelkroketten (potato crustlings), or with Serviettenknödlen (napkin dumplings). By request salad would be either leaf-, or tomato-, or cucumber salad.

- Rolls Of Filleted Beef (Rindsrouladen):
The supreme flavor of the beef filled with bacon, pickles and seasonal vegetables gives this traditional dish a lavish distinction. This dish is perfect with either mashed potatoes or noodles. By request salad would be either leaf-, cucumber-, or tomato salad.

- Beef With Onions (Zwiebelrostbraten):
Juicy sirloin steak topped with crunchy fried onions. Pickle juice adds a subtle tang to the robust stock-cognac reduction sauce. This dish is wonderful with pickled cucumber and fried potatoes on the side.
Try a full-bodied red wine. Suggested is St.-Laurent, Cabernet, or Austrian Pinot Noir.

- Vanilla Sirloin Steak (Vanillerostbraten):
Despite it's name this delicious sirloin steak rests in a wonderful aromatic garlic sauce. Garlic came to be known in Austria as the "poor manąs vanilla". Note that blanching the garlic and processing it with butter gives the sirloin sauce a mild, but pungent flavor. The Vanillerostbraten is served either with seasonal vegetables or fried potatoes or by request with both.

- Sirloin Steak á la Girardi (Girardi-Rostbraten):
Alexander Girardi was discovered in 1870 and became one of the most popular actors in Vienna, so admired that the Viennese named one of their favorite dishes for him.
This theatric dish is accompanied by a light cream sauce scented with bay leaf and enriched with diced smoked ham and mushrooms. It is served ether with seasonal vegetables or buttered noodles or by request with both.
Open a bottle of Cabernet, Merlot, or Pinot Noir St.-Laurent.

- Boiled Beef with Horseradish-Bread Sauce (Gekochtes Rindfleisch mit Semmelkren):
Beef is slowly simmered with a bouquet of vegetables to a special tenderness. The succulent boiled beef is absolutely wonderful served with this horseradish-bread sauce.

- Boiled Beef Ribs (Tafelspitz):
Short ribs of beef are slowly simmered with a bouquet of vegetables to a special tenderness. Tafelspitz is a glory of Austrian cuisine, proving that simple, time-honored fare can be the most memorable. The succulent boiled beef is particularly wonderful served with its two traditional accompaniments, chive sauce and horseradish-apple sauce. All that's needed for a perfect meal are buttered potatoes with a sprinkling of dill and/or some creamed spinach.
Viennese invariably serve a light white wine with this meat dish. Suggested is a Pinot Blanc, Riesling, Chardonnay, or Sauvignon Blanc.

- Beef Fillet With Marrow Filling (Rindslungenbraten mit Markfülle):
This is a beautiful fillet of beef that hides a delicious spinach/marrow filling. It is served with either seasonal vegetables or filled tomatoes, or with spinach.

- Beef Fillet In Pastry Blanket - Beef Wellington (Rindslungenbraten in Butterteig):
This is originally a British dish, but was soon adapted by the Austrians. This dish was created to honor the Duke of Wellington who was a a hero of the Napoleonic wars.
This dish has great popularity and is a fillet of beef tenderloin, coated with liver pâté and mushrooms and is then wrapped in a butter pastry blanket. It has remained a favorite in Britain, Austria and the U.S. for over a century since it was created.
It will be served with Madeirasauce and Chefąs choice of English vegetables.

- Pepper Steak (Pfeffersteak):
A wonderful fillet of beef rests in a delicate cream sauce with soft green pepper corns. The pepper steak is served either with Kartoffelkroketten (potato crustlings) or seasonal vegetables or filled tomatoes.

- Stewed Onion Roast (Gedünsteter Zwiebelrostbraten):
This beef has a delicate flavor of mustard and will be slowly stewed with finely cut onions until perfection. The stewed onion roast is traditionally served with Schupfnudeln (boiled & fried potatoe dumpling dough).

- Gipsy Roast (Zigeunerrostbraten):
This sirloin is deliciously roasted and over it will be placed a colorful sauce made with red-, green paprika, onions, bacon, ham and chili. It is served with buttered parsley potatoes.

- Roast In Foil (Rostbraten in der Folie):
This sirloin is very low in fat/calories, but deliciously roasted in aluminum foil with mushrooms, onions and paprika. This dish is served with slightly buttered parsley potatoes.

- Roast With Capers (Kapernrindschnitzel):
Wonderful roast of beef resting on a cream sauce with capers and anchovy paste. It is served with either noodles or Serviettenködeln (napkin dumplings).

- Steamed Oxtail (Gedünsteter Ochsenschlepp):
The steamed oxtail is accompanied by a smooth hearty sauce and served with either noodles, or Semmelknödel (white bread dumplings) or Serviettenknödel (napkin dumplings) or Kartoffelkroketten (potato crustlings) or vegetables.

- Onion Ragout (Zwiebelragout):
Very soft cubed tenderloin is steamed in an exquisite sauce made with wine and tomato paste. It is served with either Serviettenknödel (napkin dumplings), or Schupfnudeln (boiled & fried potatoe dumpling dough), or Nockerln (Spätzle), or noodles or Kartoffelnockerln (potatoe Spätzle).

Always a good wine to drink with the beef dishes is a nice red wine (preferably any Austrian) or a nice cold glass of beer (preferably any Austrian - because they brew the best!).
