"What's Cooking in the Desert" presents traditional Austrian Christmas Dinners in Joshua Tree, California!

What do Schinken, Nudelsuppe, Schnitzel, and Stollen have in common? Two traditional Austrian Christmas dinner events in the desert on December 11 and December 16, with Austrian Personal Chef Karin Winkler, in cooperation with the "Rosebud Ruby Star Bed & Breakfast" . Austrian Cuisine, a bit of old world tradition, in Joshua Tree, California. For those in search of their own special Christmas memories this holiday season, there is no need to fly all the way to Vienna, a short trip to the desert does the trick.

On December 11th and December 16th, Sandy Rosen, artist and owner of the "Rosebud Ruby Star Ranch" will provide overnight accommodations for a very special and unique dining experience with Karin Winkler, a Personal Chef specializing in Austrian cuisine. "Whats Cooking in the Desert" presents two traditional Austrian Christmas dinners in the desert wonderland of Joshua Tree, California.
Take a break from the city with it's frantic Christmas shoppers and treat yourself to this fine dining adventure that is offered with the option of over night stays in artist-embellished guest rooms in a gorgeous desert surrounding which will intrigue your curiosity. Personal Chef Karin - a native from Austria - will cook an elaborate authentic Austrian Christmas meal for guests to enjoy. Think of these special dinner events as a wonderful vacation for guests who want to taste homemade authentic meals with history and experience the countryside as a refuge for quiet traditions.

Cost for dinner only participant is $75 per person, for dinner participants including room accommodations and breakfast is $245 to $345 per person; cost for companion sharing a room is $89.

Traditionally in Austria, after Christmas Eve dinner is served, the ringing of a bell signals the opening of a door that was long locked for the children. For the first time they are permitted to look at the beautifully decorated Christmas tree, who's candles have been mysteriously lit by the Christkindl (Christ child), that came through the open window and brought all the presents that surround the bottom of the Christmas tree. Our dinner participants will be treated to a similar event with a traditionally decorated dining room and a lovely gift to be opened after dinner.

The menu for the upcoming two Christmas dinners is as follows:

First Course:
Christmas Ham cornucopias filled with ham mousse (gefüllte Weihnachtsschinkenrollen), served with poppy seed breads (Mohnweckerln).

Soup:
Clear broth with soup noodles (Nudelsuppe).

Main Course:
Viennese Style Pork Cutlets (Schweinsschnitzel Wiener Art), which are breaded pork cutlets, fried to golden perfection. They are the ne plus ultra of the Viennese cuisine.

Side Dish:
Parsley potatoes, cranberry jelly and lemon wedges (Petersilkartoffeln, Cranberry Geleé und Zitronenspalten).

Side Dish:
Red cabbage with chestnuts (Blaukraut mit Kastanien).

Salad:
Viennese cucumber salad (Wiener Gurkensalat).

Dessert:
Viennese Christmas stollen (Wiener Weihnachtsstollen), which is a buttery cake with fruits, nuts and marzipan.

After this night of indulgence you might enjoy a stroll under a starry sky in the crisp high desert air before retiring to your own cozy room to snuggle under the comforters with pleasant dreams and fond recollections.

Welcome to What's Cooking in the Desert.

It would be a pleasure if you could visit, cook and dine with us, here in Joshua Tree. Sandy Rosen, artist and owner of the "Rosebud Ruby Star Ranch" and Karin Winkler, a Personal Chef specializing in Austrian cuisine, have teamed up to offer you a very special and unique cooking and dining experience in the desert wonderland of Joshua Tree, California.

Rosebud Ruby Star Karin is a native from Salzburg, Austria who made her home in the beautiful Hi Desert near the Joshua Tree National Park. She will be your cooking instructor and she will have prepared one dinner basket and one lunch basket for you to enjoy the day before and on the day of class. During the day of class Karin will instruct you on how to prepare different authentic Viennese meals, including a breakfast and a three course dinner with two side dishes and salad.

You will be staying in one of Sandy's "Rosebud Ruby Star Ranch" desert rental retreat accommodations in the Joshua Tree Highlands, either the "Rosebud Ruby Star" Adobe, or the "Casa Rosita" Hideaway, or the "B'iltmore Bunkhouse" Cabin, or the "Rancho Rincon" Adobe.

Karin, a Personal Chef After earning her masters in fine Arts in Austria, Karin moved to California where she got married. Having cooked all her life, she decided to start "Karin's Personal Chef Service". She traveled extensively and tasted many different cuisines in Europe and the U.S., but always returned to her authentic Austrian culinary education she received from her grandmother and aunt, with that great love for homemade, comforting and delicious food. Karin is a primarily self-taught chef and her specialty is, of course, Austrian cuisine. Early in life Karin was a 'kindergarten teacher' and after her son was born she became a certified travel agent to finance her education as a live theater actress. Later on she became a theater director's assistant in Salzburg, where future actors were educated and to finance her art studies at the university, she taught theater acting.

Karin wants to share her passion for food and cooking and has decided to devote part of her time to teaching and passing on her culinary endeavors. She says: " I know that teaching the art of cooking is very meaningful and very exciting if one goes beyond the preparation of ordinary food. Particularly since eating is such a basic need for all and a form of art only for some." Karin also organizes culinary and other special interest tours in Austria.

Rancho Rincon's Kitchen Classes are taught in the absolutely beautiful kitchen of the traditional western adobe "Rancho Rincon". This is a pretty, yet practical kitchen, with a wooden counter top island which gives the participants a possibility to work on. The new stove and oven, the new refrigerator and freezer, the charming nooks with the Rancho's personal plates, cooking utensils, etc., complete the kitchen. The architecture of the building itself is designed in interesting Adobe style and encompasses the very essence of desert tranquility. You will stay there during your cooking and dining adventure, you can also spend the nights there or a ten minute walk from the Rancho Rincon, at one of the other desert rental retreat accommodations. This is really an experience with a native Austrian, where you will be creating some of the most delicious, authentic dishes.

FritattensuppeRancho Rincon's Kitchen Participants are given the recipes of the day's class. The class goes through the preparation of several scheduled cooking sessions, followed by a long dinner in the large open dining area near a fire place, where we dine and enjoy our creations.
